Boiled potatoes (kartofle gotowane z wody)

Potatoes, prepared in one way or another, will accompany most Polish meat dishes. While potato dumplings or potato noodles are labor intensive, simple boiled potatoes sparkled with parsley or dill are elegant and easy to prepare.

Ingredients

  • 2 ΒΌ lb potatoes
  • 2 teaspoons salt
  • fresh dill

Directions

Peel and rinse 2-1/4 lbs potatoes. Cut larger ones in 1/2 so that all pieces are of roughly equal size.

Transfer to pot, add 1-2 t salt and water to cover and cook until done (20-30 min).

Drain well, return pot to shake pot over heat until all moisture steams away. Turn out onto serving dish.

Serving Suggestions

Serving suggestions: If being served with a main course, you can pour gravy. If not, dot hot potatoes with butter and garnish with fatback nuggets and a little of their drippings. A sprinkling of fresh chopped dill always perks up the flavor and appearance of boiled potatoes.
