This salad or relish made with grated cooked beetroot seasoned with horseradish is the most typical Polish accompaniment to roast and smoked meats and sausages. The first recorded recipe for Ćwikła was provided by writer Mikołaj Rey (1505-1569), known as the ‘father of Polish literature’.
