(FLAH-kee, FLAHCH-kee)
Tripe soup, on the spicy side, flavored with black and red pepper, ginger and marjoram; a topping of grated cheese makes it ‘po warszawsku’ (Warsaw style). Condiments such as additional marjoram, paprika, Turkish pepper and Maggi seasoning are usually provided for those who enjoy a zingier taste. Known as flaczki (the diminutive form) to descendants of the old Polonia and flaki to more recent Polish immigrants.
