Beeksteak Tartare is a mound of minced beef tenderloin with a raw egg yolk deposited in its volcano-like crater and served in a wreath of chopped onion, pickled cucumbers and pickled mushrooms. A glass of ice-cold vodka is the natural accompaniment to this cold snack or starter.
